Coal Region Zucchini Bread

Ingredients
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 cups zucchini (Unpeeled and grated )
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1⁄4 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
Directions
- Combine all ingredients and bake at 350 for 1 hour.
- We use three baking crocks from Pampered Chef, but you can use whatever you think will work.
