Cloud Eggs

An internet sensation and Hungry Girl site has an easy way to fix and only 2 weight watcher smart points. Here's what HG had to say: cloud eggs are super-fluffy pillows of egg whites baked with the yolks nestled on top. They're beautiful, delicious, and a fun change of pace if you're used to scrambles and hard-boiled eggs. We first tried baking them on a baking sheet but found the results fell flat. Serves: 1

Yields: 2 eggs

Ingredients

  • 2  large eggs
  • 1  dash  each  salt and black pepper
  • Optional seasoning

  •  everything bagel seasoning blend additional  salt and black pepper (like the kind by Trader Joe's)

Directions

  1. Preheat oven to 450 degrees.
  2. Spray 2 cups of a jumbo muffin pan (like this one) with nonstick spray. (If you don't have a jumbo muffin pan, use two small oven-safe bowls.).
  3. Separate egg whites into a large bowl, and gently place yolks in a small bowl without breaking them.
  4. With an electric mixer set to high speed, beat egg whites until fluffy and slightly stiff, about 4 minutes.
  5. Divide egg whites between the two sprayed cups of the muffin pan.
  6. Using the back of a spoon, create a small indentation in the center of each egg white. Gently place a yolk in each indentation.
  7. Season with salt and pepper. Bake to your preference, 5 - 7 minutes (5 minutes for runnier yolks; 7 minutes for firmer ones).
