Cleaned-Up Bacon Quiche

Ingredients
- 1 unbaked 9-inch pie crust
- 9 slices bacon, cooked
- 1 medium onion
- 1 1⁄2 cups low-fat swiss cheese, shredded
- 1 (12 ounce) can fat-free evaporated milk
- 3⁄4 cup egg substitute
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄4 teaspoon cayenne
- 1⁄2 teaspoon mustard powder
Directions
- Preheat oven to 375 degrees.
- Crumble bacon and place in prepared pie crust.
- Chop onion and saute using cooking spray.
- Add to bacon in pie crust.
- Add swiss cheese to onion and bacon and gently mix.
- Mix remaining ingredients in a bowl, then pour gently over bacon mixture.
- Bake for 45 minutes, until golden brown.
