Classic White Blondies

Found this recipe on the back of a Ghiradelli white chocolate baking bar (among others), but haven't tried it yet.......

• Serves: 12

Ingredients

• 16  ounces white chocolate, baking bars (broken into 1-inch pieces)
• 1⁄2 cup unsalted butter (cut into small pieces)
• 2  eggs
• 1⁄3 cup sugar
• 1  tablespoon vanilla extract
• 1 1⁄4 cups flour
• 3⁄4 teaspoon salt
• 1  cup  semi-sweet chocolate chips (optional)

Directions

1. Melt white chocolate and butter in double boiler over hot water.
2. Stir mixture occasionally until smooth.
3. Beat eggs until foamy; then add sugar, vanilla and white chocolate mixture (slowly).
4. Fold in flour, salt, and chocolate chips (if using) until well combined.
5. Spoon mixture into a 9" square baking pan with the bottom lined and buttered with parchment paper.
6. Bake 25 minutes at 350°.
