Classic French Onion Soup

Yields: 4 meal sized bowls
Ingredients
- 1⁄4 cup butter
- 2 large onions, sliced or 4 cups sliced onions
- 2 tablespoons flour
- 6 cups beef broth
- 3⁄4 cup red wine
- 1 tablespoon Worcestershire sauce
- 1⁄4 teaspoon fresh ground pepper
- 1 bay leaf
- salt
- 2 cups swiss cheese, shredded
- toasted baguette, slices
Directions
- Melt butter in a saucepan on med-low, add onions. Cover and cook for 10 mins or till onions are tender but not brown (stir occasionally).
- Stir in flour. Then while stirring then add broth, wine, Worcestershire, pepper and Bay leaf while stirring. Bring to a boil then cover and reduce to a simmer for 30 mins - stirring occasionally. Salt to taste just before serving.
- To serve: Ladle soup into bowls, top with toast and cheese. Broil on high til cheese melts.
