Classic Coleslaw

Yields: 4 cups
Ingredients
- 4 cups thinly sliced green cabbage
- 1⁄2 cup coarsely grated carrot
- 1⁄2 cup thinly sliced onion
- 1 tablespoon minced fresh red chili pepper
- 1 tablespoon minced garlic
- 2 tablespoons red wine vinegar
- 1 1⁄2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- salt and pepper
Directions
- In a bowl, combine cabbage, carrot, onion, chile pepper and garlic.
- In a small bowl, whisk together remaining ingredients. Toss with vegetables. Let stand for an hour. Toss again before serving.
