Clancy's Meatloaf

A meatloaf recipe given to my mum many years ago by a workmate. Never fails! A great sauce cooked with the loaf makes it perfect to have with creamy mashed potato.

• Yields: 1 loaf

Ingredients

• 500  g  pork mince
• 500  g beef mince
• 2  onions
• 2  slices bacon
• 1  egg
• 1  tablespoon curry powder
• 1⁄4 cup parsley
• 1⁄4 cup chives
• 1  carrot
• 3⁄4 cup  breadcrumbs
• 1⁄2 cup milk
• 1⁄2 cup water
• 1  cup tomato sauce
• 1⁄4 cup Worcestershire sauce
• 1  teaspoon instant coffee
• 1⁄4 cup brown sugar
• 3⁄4 cup water

Directions

1. Loaf.
2. Chop onions, parsely, chives and bacon. Grate carrot.Add meat,breadcrumbs,egg,curry,milk and water.
3. Combine all ingredients well.
4. Put into a greased loaf tin.
5. Cook in moderate oven for about half an hour, then pour over sauce and cook a further 45 minutes.
6. Sauce.
7. Combine remaining ingredients.
