Clams in Black Bean Sauce

I don't know how Authentic this is, but it comes from my Chinese Cookbook.

Serves: 4

Ingredients

  • 2  lbs small clams
  • 1  tablespoon  vegetables or 1  tablespoon  peanut oil
  • 1  teaspoon  fresh gingerroot, finely chopped
  • 1  teaspoon garlic, finely chopped
  • 1  tablespoon fermented black beans, rinsed and coarsely chopped
  • 2  teaspoons  shaoxing rice wine
  • 1  tablespoon scallion, finely chopped
  • 1  teaspoon salt (optional)

Directions

  1. start by washing clams throughly.
  2. soak them in water until it is time for use.
  3. in a wok heat oil, and stir fry the ginger-root and garlic until fragrant.
  4. add the black beans and cook for 1 minute.
  5. turn heat to high, drain the clams and add to the wok.
  6. add the Shaoxing rice wine, and stir fry (mixing) for about 2 minutes.
  7. cover and cook for about 3 minutes.
  8. add the scallions.
  9. add salt if needed.
  10. serve immediately.
