Clam Cakes

Yields: 30-36 small clam cakes

Ingredients

  • 2  cups flour
  • 2  tablespoons baking powder
  • 12 teaspoon sugar
  • 14 teaspoon salt
  • 2 (6 1/2ounce) cans minced clams, drained with 1/2 cup broth/juice reserved
  • 1  large egg, at room temp
  • 34 cup milk, at room temp
  • 12 teaspoon cream of tartar
  •  pepper
  •  Old Bay Seasoning (see recipe 15562)
  •  vegetable oil (for cooking)

Directions

  1. In a large bowl combine the flour, baking powder, sugar and salt.
  2. Mix well.
  3. Add the remaining ingredients and stir well.
  4. In a deep pot heat 3 inch of oil to 375 degrees.
  5. Drop batter in by the teaspoonfull.
  6. Cook for 3-4 minutes on each side or until golden brown.
  7. Drain and serve hot.
  8. Sprinkle with pepper and Old Bay Seasoning.
