Cinnamon-Peach Cottage Cheese Pancakes

This is a yummy pancake recipe I got from another recipe site. I made several changes to the original recipe to make it even healthier. My kids LOVED them. I'll post the original recipe and add my changes here. I used whole wheat flour instead of white, replaced 2 of the eggs with flax seed, used 2 packets of truvia instead of sugar, used non fat cottage cheese and non fat milk and used mango instead of peaches just cuz we love mangos and had them on hand.   1. Mix eggs, cottage cheese, milk, vanilla, butter, and peach in a large bowl. Combine flour, sugar, salt, baking soda, and cinnamon in a small bowl. Stir flour mixture into the cottage cheese mixture until just combined.
  2. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
