Cinnamon Ice Cream

Serves: 8-10
Yields: 1 1/2 quarts
Ingredients
- 1 cup sugar
- 1 1⁄2 cups half-and-half cream
- 2 eggs, beaten
- 1 cup heavy cream
- 1 teaspoon vanilla
- 2 teaspoons ground cinnamon
Directions
- In a saucepan over medium heat, stir together sugar and half and half.
- When mixture begins to simmer remove from heat and slowly whisk into eggs. (Pour hot cream mixture slowly, but whisk quickly so that you don't end up with scrambled eggs!).
- Pour mixture back into saucepan and stir in heavy cream.
- Continue cooking over medium low heat, stirring constantly until mixture is thick enough to coat the back of a spoon.
- Remove from heat and whisk in vanilla and cinnamon.
- Let cool completely in refrigerator.
- When cooled pour mixture into ice cream maker and freeze according to your ice cream makers instructions.
