Cinnamon Buttons

Yields: 60 cookies
Ingredients
- 1 cup butter
- 1 cup ground almonds
- 1⁄3 cup sugar
- 1 2⁄3 cups flour
- 1⁄4 cup superfine sugar
- 2 teaspoons ground cinnamon
Directions
- Place the butter, almonds, and sugar into a large bowl
- Beat with an electric mixer on medium speed or until light and fluffy.
- Add the flour.
- Mix for 2 minutes, or until completely incorporated.
- Cover the dough with plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 350 degrees Fahrenheit.
- Place the superfine sugar and cinnamon into a shallow bowl.
- Mix well.
- Scoop or roll the cookies into 3/4-inch balls
- Place them about 1 inch apart n an ungreased baking sheet
- Bake for 20 minutes, or until they just start to brown on the edges.
- Cool for about 5 minutes
- Roll them in cinnamon sugar.
- Cool on parchment or waxed paper.
