Cinnamon Bread

Ingredients
- 1⁄2 cup oil
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk
- 2 teaspoons baking soda
- 4 cups all-purpose flour
- 1⁄2 cup sugar
- 2 tablespoons cinnamon
- 1⁄2 teaspoon salt
Directions
- Preheat oven to 350 degrees. Spray two loaf pans with non-stick cooking spray.
- Mix together oil, sugar, eggs, buttermilk, baking soda and flour in large bowl. Pour 1 cup of the batter into each prepared pan.
- Combine sugar, cinnamon and salt in a small bowl. Sprinkle half the sugar mixture over each pan; pour remaining batter equally between pans. Sprinkle remaining sugar mixture over batter.
- Using a knife, swirl through batter. Bake approximately 1 hour, or until a knife inserted in center comes out clean. Cool 10 minutes, then remove from pans and place on wire rack. Slice bread when completely cooled.
