Cinnamon Apple Crisp

  1. Preheat oven at 350 degrees F.
  2. Find a 9 or 10 inch pie plate, spray with non stick spray.
  3. Start with the crisp:.
  4. Place brown sugar, flour, oats, and coconut in a medium bowl, using your hands mix. Add pecans, cinnamon, and ground ginger. Toss gently. Pour melted butter evenly over the dry mixture and stir with spoon until well mixed and evenly moist.
  5. Filling:
  6. Prep apples, peel, core, and chop. Put in apples in another medium bowl and add 1/2 cup sugar on top and mix with spoon.
  7. Final assembly:.
  8. Pour filling into pie plate, and sprinkle crisp topping evenly over filling. Don't forget to lick the topping your fingers --
  9. Put on middle shelf of oven, bake 45 - 55 minutes.
