Cinna-Coco-Meal Cookies (Cinnamon Coconut Oatmeal)

Ingredients
- 1⁄2 cup sugar
- 1⁄3 cup brown sugar
- 1 1⁄2 cups butter (3 sticks) or 1 1⁄2 cups margarine (3 sticks)
- 2 eggs
- 1 1⁄2 teaspoons vanilla extract
- 1 cup flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking soda
- 2 teaspoons cinnamon
- 2 cups shredded coconut (sweetened with sugar-if regular, add extra 1/4 cup sugar)
- 2 cups quick oats
Directions
- Preheat oven to 385 degrees.
- Spread oats and coconut on dry pan - cook until slightly crispy/brown. (shouldn't be more than 7 minutes so keep an eye on it.)
- In a large mixing bowl - use an electric mixer to mix the (softened) butter, sugar and brown sugar.
- Add eggs in one at a time then add the vanilla.
- In a separate bowl - mix together the flour, salt, baking soda, and cinnamon. Once mixed, pour into the egg+sugar batter and mix together.
- Lastly, pour the crispy coconut and oatmeal (make sure it has had time to cool down) into the mixture and mix with a large spoon.
- Makes about 20 large cookies.
