Cilantro Tomato Relish

Serves: 6-8
Ingredients
- 1 1⁄2 lbs plum tomatoes, cored and roughly chopped
- 1⁄2 red bell pepper, seeded, stemmed, and minced
- 2 teaspoons ground cumin
- 1 tablespoon minced onion
- salt, to taste
- cayenne pepper, to taste
- 1 lime, juice of
- 2 tablespoons cilantro, chopped
Directions
- Combine tomatoes, bell pepper, cumin, onion, salt, cayenne pepper, and lime juice. Taste and adjust seasonings if needed.
- Just before serving, add cilantro.
