Cilantro Rice With All Raw Veggies

Yields: 1/2 cup
Ingredients
- 1 cup uncooked rice
For each cup of uncooked rice
- 2⁄3 cup cilantro, loosely packed
- 1⁄3 cup chopped onion
- 1⁄4 cup green onion, chopped
- 1 jalapeno (or to taste)
- 1 tablespoon lime juice
- 1 teaspoon olive oil
Directions
- Cook rice as usual, with 1 teaspoons salt per cup of rice. I always use long grain rice. However, you could use minute rice too.
- Puree everything except the rice in a blender, add to the cooked rice, stir well.
