Cilantro Lime Dressing

Yields: 1 cup
Ingredients
- 1⁄3 cup rice wine vinegar
- 1⁄4 cup fresh lime juice
- 1 teaspoon purred chipotle chile in adobo
- 2 tablespoons honey
- 1⁄2 teaspoon kosher salt
- 1 cup chopped cilantro, stems and leaves
- 3⁄4 cup oil (the recipe says canola, but I used olive oil)
Directions
- 1. In a blender, blend everything except the oil.
- 2. In a steady stream add the oil, until smooth.
