Cilantro-Chili Potatoes

Another tasty potato recipe. The recipe comes from our local home gardening newsletter.

Serves: 4-6

Ingredients

  • 8 -10  small  red potatoes, quartered and unpeeled
  • 2  tablespoons butter
  • 3  cloves garlic, minced
  • 12 teaspoon chili powder
  •  salt and pepper
  • 12 cup fresh cilantro, chopped (packed)

Directions

  1. In a medium saucepan cook potatoes in water until tender.
  2. Drain and keep warm.
  3. Meanwhile, in another saucepan melt butter; add garlic, stirring for 2-3 minutes.
  4. Add potatoes, chili powder, cilantro, salt and pepper.
  5. Lightly brown and serve warm.
