Ciabatta With Spinach and Soft Cheese

Gourmet snack for when you have spinach in the house. Could use another gourmet style bread.

Yields: 2 toasts

Ingredients

  • 2  slices  sun-dried tomato italian bread
  • 50  g  baby spinach leaves
  • 1  teaspoon olive oil
  • 1  tablespoon raisins
  • 25  g  light soft cheese (cream cheese)

Directions

  1. Lightly toast bread slices. In a small saucepan, wilt spinach leaves with olive oil. Season with salt and pepper and stir in raisins. Place on top of toast and top with light soft cheese.
