Christmas Oatmeal Cranberry Cookies

Yields: 24-36 cookies
Ingredients
- 2⁄3 cup granulated sugar
- 2⁄3 cup packed brown sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups quick oats
- 1 cup flour
- 1 cup shortening
- 1 cup dried cranberries
Directions
- Combine all ingredients EXCEPT oats, flour, and cranberries in mixer. Mix well.
- Add flour to form dough. Fold in oats and cranberries.
- Drop 1 -1 1/2" balls of dough on ungreased cookie sheet 2" apart.
- Bake 9-11 minutes at 350 degrees, or until lightly brown around edges.
- Do NOT over bake. Cookie will be slighly undercooked and will firm while cooling. Necessary if you want a soft and chewy cookie.
