Christmas Cranberry Pie

Ingredients
- 1 1⁄2 cups cranberries (fresh or frozen)
- 1 teaspoon grated orange rind
- 1 cup raisins
- 3⁄4 cup sugar
- 1 1⁄2 tablespoons flour
- 1⁄4 teaspoon salt
- 1⁄2 cup boiling water
- 1 unbaked 9-inch pie shell
Directions
- Process first 6 ingredients in blender until combined, add boiling water and blend until smooth. Pour into pie shell.
- Bake at 400F for about 20 minutes until set. Cool.
- Top with whipped cream and garnish with a couple of fresh cranberries or dried cranberries.
