Christmas Cranberry Appetizer

Ingredients
- 1 tablespoon butter
- 2 cups thinly sliced onions
- 1⁄4 cup balsamic vinegar
- 1⁄2 cup dried cranberries
- 1 tablespoon sugar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon grated orange rind
- 16 crackers
- 8 ounces reduced-fat cream cheese
Directions
- Melt butter in a pan over medium heat. Add onions and sauté 15 to 18 minutes, or until golden and tender.
- Stir in vinegar, cranberries, sugar, salt, and orange rind; Cook, stirring occasionally, 2 to 4 minutes or until liquid is reduced to about 2 tablespoons.
- Spread cream cheese onto the crackers.
- Top each with cranberry compote.
