Chris & Cheryl's Mega Spaghetti Sauce

Ingredients
MEAT
- 10 lbs lean ground beef
- 3 lbs Italian sausage (casings removed)
- 2 tablespoons olive oil
VEGETABLES
- 4 onions (chopped)
- 4 celery ribs (diced)
- 9 garlic cloves (minced)
- 2 green peppers (diced)
- 2 tablespoons olive oil
TOMATOES AND SPICES
- 112 ounces tomato sauce (4 - 28oz cans)
- 112 ounces diced tomatoes (4 - 28oz cans)
- 112 ounces crushed tomatoes (4 - 28oz cans)
- 10 ounces tomato paste (2 - 5oz cans)
- 1 cup red wine
- 2 tablespoons italian seasoning
- 2 tablespoons oregano
- 2 tablespoons basil
- 2 tablespoons salt
- 1 tablespoon pepper
- 1 tablespoon crushed red pepper flakes
- 2 tablespoons brown sugar
- 4 bay leaves
Directions
- Chop all vegetables in small pieces, put aside.
- In skillet, brown meat (beef and sausages) , remove excess fat, put aside.
- Fry onions until tender add garlic and cook for 1 more minute, put aside.
- Fry rest of vegetables.
- Put meat, onions and vegetables in large pot.
- Add tomato sauce, tomatoes, tomatoe paste, wine, spices and simmer from 2 to 3 hours stirring occasionnaly and until sauce thikens.
