Directions

  1. Finely chop all veg.
  2. Combine chopped veg with salt in a large glass bowl.
  3. Let stand for 6-8 hours.
  4. Drain well.
  5. Combine remaining ingredients in a large pot and simmer for 10 minutes.
  6. Add drained veg and simmer another 10 minutes.
  7. Now bring to a boil.
  8. Ladle into hot jars leaving 1/2 inch head space.
  9. Process in a boiling water bath for 10 minutes at altitudes up to 1000 feet.
