Chorizo

Yields: 8 sausages
Ingredients
- 6 tablespoons red chili powder
- 5 tablespoons white wine vinegar
- 2 tablespoons dried oregano
- 3 1⁄2 teaspoons salt
- 2 teaspoons ground cumin
- 10 -20 dried guajillo bell peppers, ground into powder
- 4 -6 garlic cloves, crushed
- 2 lbs ground pork
- 2 yards pig intestine for sausage links, cleaned thoroughly
Directions
- Mix the red chili powder, vinegar, oregano, salt, cumin, guajillo pepper powder and garlic together in a large bowl. Mix in the ground pork and cover.
- Fry the meat as is or stuff into the cleaned pig intestine to create sausage links before cooking thoroughly.
