Chopped Salad With Bacon & Avocado

Serves: 4-6
Ingredients
- 8 cups romaine lettuce, chopped
- 1 red bell pepper, chopped
- 2 large roma tomatoes, chopped
- 1 avocado, diced
- 3⁄4 cup dried cranberries
- 1 cup pecans, chopped or 1 cup a couple of handfuls of toasted pine nuts
- 8 -10 slices bacon, cooked crisp and crumbled
- 6 ounces feta cheese, crumbled
- 1⁄4-1⁄2 cup of any garlic flavored salad dressing (I use Garlic Expressions) or 1⁄4-1⁄2 cup any balsamic vinaigrette
Directions
- In a large, shallow salad bowl, layer the ingredients in the following order: Lettuce, Bell Pepper, Tomato, and Cranberries.
- Drizzle the dressing over the top, starting with a 1/4 cup. Toss and taste, add more dressing, if desired.
- Top with Avocado, Feta Cheese, Nuts and Bacon. Gently toss one more time, being careful not to crush avocado.
