Chocolate Raspberry Pie

Here's an easy pie that's always a crowd pleaser. Consider serving it with whipped cream. If you whip the cream yourself, try flavoring it with a little vanilla or brandy. Serves: 6-8

Ingredients

  • 9  inches  ready-made pie crusts
  • 12 cup  raspberry jam
  • 1  cup sugar
  • 14 cup all-purpose flour
  • 12 teaspoon salt
  • 2  eggs, beaten
  • 12 cup unsalted butter, melted (1 stick)
  • 1  cup  semi-sweet chocolate chips

Directions

  1. Preheat the oven to 350. Thaw or prepare the pie crust according to the package directions. Melt the jam, and let it cool while you assemble the pie.
  2. In a medium sized mixing bowl, combine the sugar, flour, and salt with a fork to sift. Add the eggs and stir. Add the butter and melted jam, and stir. Stir in the chocolate chips, then pour into the pie crust.
  3. Bake on a cookie sheet (to prevent oven splillage) for 45 minutes, or until the top has firmed. Let cool before serving. You may also serve it chilled.
