Chocolate Potato Cake

A vintage recipe from 1912.

  1. Set diced potatoes to a boil until tender (peel on recommended) Boil about 10-15 minutes.
  2. Cream butter & sugar until fluffy & pale.
  3. Slowly mix in eggs.
  4. Rice or mash potatoes In a separate bowl, and stir in milk to cool down. Mix well.
  5. Combine flour, baking powder & spices in a separate bowl. Gently mix flour mix, grated chocolate, nuts & potatoes. (Streaks of flour is okay, it helps it in the end).
  6. Add batter to a buttered & floured 8x8 pan.
  7. Bake @ 350 F for 45-55 minutes, check with a toothpick @ 40 minutes.
  8. Frosting Instructions:
  9. Wait to make frosting until cake is done.
  10. Add all ingredients but vanilla, to a pan.
  11. Keep on medium-low heat until melted, combined & thicker.
  12. Remove from heat and mix in vanilla. Mix to desired thickness. .
  13. Apply to cooled cake.
