Chocolate Potato Cake

Ingredients
- 1⁄2 cup salted butter
- 2 eggs, beaten
- 1 cup sugar
- 1⁄2 cup whole milk
- 1⁄2 cup mashed potatoes (about 1 medium potato)
- 1 cup flour
- 2 teaspoons baking powder
- 1 cup grated baking chocolate (unsweetened preferably)
- 1⁄2 cup chopped nuts (optional)
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄8 teaspoon clove
Frosting Ingredients
- 1 tablespoon salted butter
- 2 ounces chocolate
- 1 cup sugar
- 1⁄2 teaspoon vanilla extract
- 1⁄4 cup heavy cream
Directions
- Set diced potatoes to a boil until tender (peel on recommended) Boil about 10-15 minutes.
- Cream butter & sugar until fluffy & pale.
- Slowly mix in eggs.
- Rice or mash potatoes In a separate bowl, and stir in milk to cool down. Mix well.
- Combine flour, baking powder & spices in a separate bowl. Gently mix flour mix, grated chocolate, nuts & potatoes. (Streaks of flour is okay, it helps it in the end).
- Add batter to a buttered & floured 8x8 pan.
- Bake @ 350 F for 45-55 minutes, check with a toothpick @ 40 minutes.
- Frosting Instructions:
- Wait to make frosting until cake is done.
- Add all ingredients but vanilla, to a pan.
- Keep on medium-low heat until melted, combined & thicker.
- Remove from heat and mix in vanilla. Mix to desired thickness. .
- Apply to cooled cake.
