Chocolate Pineapple Lump Pudding (Raw) (New Zealand)

POSTED FOR ZAAR WORLD TOUR. Pineapple Lumps are Kiwi candies which are chewy, pineapple flavoured and coated with chocolate. A real Kiwi favourite. This dessert imitates their flavour.

• Yields: 2 bowls

Ingredients

• 1  cup cashew nuts
• 1⁄2 cup  soft dates (or soaked)
• 2  avocados
•  coconut water, as needed
•  cacao
• 1⁄2 cup  dried pineapple, chopped

Directions

1. Blend all but the dried pinnaple until delicious and creamy.
2. Add the chopped dried pineapple.
3. Leave refrigerated for at least 3 hours.
4. After cooled the pineapple is lovely and chewy, just like pineapple lumps!
