Chocolate Oatmeal Muffins

Ingredients
- 1 cup old fashioned oats
- 1 cup almond milk
- 2 teaspoons cider vinegar
- 1⁄3 cup margarine or 1⁄3 cup vegetable shortening
- 3 tablespoons sugar
- 3 tablespoons cocoa powder
- 1 tablespoon molasses
- 1⁄4 cup applesauce (or 1 1/2 tsp Ener-G Egg Replacer plus 2 T water)
- 1⁄2 cup all-purpose flour
- 1⁄2 cup spelt flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon salt
Directions
- Mix together almond milk and vinegar, and pour over oats. Cover and let soak for about an hour.
- In a separate bowl, beat together margarine, sugar, molasses and apple sauce. Fold into oats.
- In a separate bowl, whisk together cocoa powder, flours, baking powder, baking soda, and salt until well blended.
- Pour oat mixture into flour mixture and stir gently until well combined.
- Spoon batter into lined muffin tin.
- Bake in 400 F for 20-25 minutes.
