Chocolate Mint Layer Cookies

Ingredients
Cookies Layer
- 2 (1 ounce) unsweetened chocolate squares
- 1⁄2 cup butter
- 1 cup sugar
- 3⁄4 cup flour, sifted
- 2 eggs, slightly beaten
- 1 teaspoon vanilla
Mint Filling
- 1 1⁄2 cups powdered sugar
- 2 tablespoons butter, softened
- 3⁄4 teaspoon peppermint extract
- 2 tablespoons heavy cream or 2 tablespoons evaporated milk
- green food coloring
Glaze
- 3 ounces German sweet chocolate
- 2 tablespoons butter
- 2 tablespoons butter
- 2 teaspoons vanilla
- 1⁄2 inch piece paraffin wax
Directions
- Cookies Layer:.
- Melt butter and chocolate over low heat. Mix flour & sugar. Add to chocolate mixture. Add eggs & vanilla. Pour into greased 9x9x2 inch pan. Bake at 350 degrees for 20 minutes. Cool.
- Mint Filling:.
- Combine ingredients and beat until smooth. Spread over cookie layer. Chill until firm.
- Glaze:.
- Melt ingredients. Spread over cookies. Cut into 1 inch squares.
