Chocolate Mayonnaise Cake

This is an old family recipe that's been around for 50+ years. This was always the cake I requested that my mom make for my birthday growing up and I'm the youngest so it's definitely over 50 years old. Also, even though we call this mayonnaise cake, it's actually made with Miracle Whip, so sorry for the title being misleading, it's just what we call it. I just made this for a bake off at work (where I called it Chocolate Surprise Cake) and won for being the most unique! This cake is super moist and makes enough batter for a 9x13 cake and about a dozen cupcakes. Show more

  1. In a large mixing bowl, combine miracle whip and sugar.
  2. In another large bowl, combine flour, cocoa and baking soda.
  3. Combine water and vanilla.
  4. Add combined flour mix and water mix alternately to miracle whip mix, beating well after each addition.
  5. Grease 9x13 pan with butter. Pour in mix to fill a little less than half way.
  6. You will have some batter left over. (Enough for about a dozen cupcakes. I actually filled a dozen cupcakes half way first and then put the rest in the cake pan.).
  7. Bake at 350? for 35-40 minutes (about 25 minutes for cupcakes) or until toothpick comes out clean.
  8. For the frosting, use the last five ingredients.
  9. In a large bowl, beat butter and vanilla.
  10. In another large bowl, combine powdered sugar and cocoa.
  11. Add combined powdered sugar and cocoa alternately with milk, beating well after each addition.
  12. Frost cake and cupcakes.
