Chocolate Mascarpone Pudding

Ingredients

  • 4  egg yolks
  • 12 cup sugar
  • 12 teaspoon vanilla
  • 14 cup  unsweetened cocoa powder
  • 12 lb mascarpone
  • 14 cup marsala
  • 12 cup  whipped cream
  • 34 cup walnuts, toasted

Directions

  1. In a big metal bowl, beat the egg yolks and sugar until light and fluffy.
  2. Place the bowl over a saucepan, half filled with simmering water, and whisk until “ribbons” form.
  3. Still whisking, add the vanilla, cocoa, and mascarpone; beat until smooth.
  4. Slowly add the Marsala, whisking constantly until the mixture thickens.
  5. Remove form the heat and spoon into pudding bowls, about ½ cup each.
  6. Chill until set.
  7. Pipe the whipped cream on top and sprinkle with the nuts.
