Chocolate Lover's Mousse

Ingredients
- 1 teaspoon unflavored gelatin
- 1 tablespoon cold water
- 2 tablespoons boiling water
- 1⁄2 cup sugar
- 1⁄4 cup cocoa
- 1 cup cold whipping cream
- 1 teaspoon almond extract
- fresh raspberry (optional)
Directions
- In small cup, sprinkle gelatin over cold water.
- Let stand 1 minute to soften add boiling water Stir til gelatin is completly dissolved and mixture is clear cool slightly In small mixing bowl, stir together sugar& cocoa; add whipping cream& vanilla Beat on medium speed of mixture, scraping bottom of bowl occasionally, til mixture is stiff Pour in gelatin mixture; beat til well blended Spoon into serving dishes or champagne glasses Refrigerate about 30 minutes Garnish with raspberries, chocolate curls or miniature chips.
