Chocolate Ginger Cookies

Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 1⁄2 cups flour
- 1 cup oats (ground in blender or food processor)
- 1⁄2 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups semi-sweet chocolate chips
- 1⁄2 cup crystallized ginger, chopped
Directions
- Preheat oven to 350°F Cream together butter and sugars; beat in vanilla and eggs. Stir in flour, ground oats, cocoa powder, salt and baking soda until just combined. Stir in chocolate chips and ginger. Place tablespoon-size balls on ungreased baking sheets; bake for about 10 minutes or until slightly soft in the center. Let cool on baking sheets for about 5 minutes, then transfer to wire racks to cool.
