Chocolate Crisps

Ingredients
- 1 cup unsalted butter, room temp
- 1 -1 1⁄2 cup caster sugar
- 3 tablespoons unsweetened dutch cocoa
- 2 tablespoons almond extract (can sub vanilla or orange extract)
- 1⁄4 teaspoon baking powder
- 1 large egg
- 1⁄4 teaspoon salt
- 1 1⁄2 cups flour
- nuts (they should be finely ground and roasted beforehand, the oils in them would weigh the cookie down) (optional)
Directions
- cream the butter and sugar until light and fluffy; I added each ingredient into this mixture and blended well; i added the flour by the 1/2 cup because i wanted to make sure it was well blended. the mix should be light and fluffy when done. I chilled for about an hour; then preheated my oven to 350 degrees.
- drop by teaspoon onto baking sheet or parchment paper, bake for 17 minutes. cool for 5 minutes.
