Chocolate Covered Cherries

These are delicious cherries. It's best to let the candies ripen for 1 to 2 weeks, as they keep getting better and better with time. If you can't wait that long, it's understandable! :-) Show more

  1. Drain cherries and set on paper towels to dry.
  2. In a medium bowl, combine butter and corn syrup until smooth.
  3. Stir in confectioners' sugar and knead to form a dough.
  4. Chill to stiffen if necessary.
  5. Wrap each cherry in about 1 teaspoon of dough.
  6. Chill until firm.
  7. Melt chocolate coating in a heavy saucepan over low heat.
  8. Dip each cherry in by its stem, and place on waxed paper lined sheets.
  9. Chill until completely set.
  10. Store in an airtight container in a cool place.
  11. Best after 1 or 2 weeks.
