Chocolate Cookie Bars

Yields: 20 cookies
Ingredients
- 158 ml unsifted flour
- 1⁄2 teaspoon baking powder
- 225 ml sugar
- 1⁄4 teaspoon salt
- 80 ml butter
- 1 teaspoon vanilla
- 2 eggs
- 2 unsweetened chocolate squares
- 118 ml chopped raisins
- 60 ml chopped nuts (optional)
Directions
- Mix flour, baking powder and salt together in a bowl.
- Melt butter and chocolate in a double boiler.
- In a large mixing bowl, beat eggs well. Add sugar to the eggs gradually, beating the mixture after each addition.
- Add the raisins and vanilla to the egg mixture.
- Add the flour, baking powder and salt to the egg mixture. Stir in the nuts, if using them.
- Preheat oven to 175°C.
- Grease a square cookie sheet. Pour the dough in, taking care to level it out.
- Bake for 25 minutes, until it turns a golden brown. Cool before cutting into bars.
