Chocolate Coffee Almond Cookies

From a 2005 Cookies magazine, these are great cookies, better after they sit for at least a day!

  1. Preheat oven to 350°F.
  2. Dissolve coffee crystals in hot water; set aside.
  3. In a large bowl, beat butter, sugar, baking soda and salt until well combined.
  4. Beat in coffee mixture, eggs, and vanilla.
  5. Beat in as much flour as you can then stir in any remaining flour.
  6. Stir in choclate chips and almonds.
  7. Drop dough in heaping teaspoons 2-inches apart on a greased cookie sheet.
  8. Bake in a preheated oven 8-10 minutes or until edges are lightly browned.
