Chocolate Chunk Coffee Cookies

Ingredients
- 1 large egg
- 1 tablespoon instant coffee
- 1 teaspoon vanilla extract
- 8 ounces semisweet chocolate, chopped
- 1⁄2 cup butter, softened
- 1⁄2 cup granulated sugar
- 1⁄2 cup brown sugar, packed
- 1 cup flour
- 1 cup quick-cooking oats
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄2 cup chopped nuts (optional)
Directions
- Preheat oven to 375 degrees.
- Stir egg, coffee and vanilla in a small bowl until blended.
- Beat butter and sugars in a large bowl with an electric mixer on medium speed until light and fluffy. Mix in the egg mixture. Beat in the flour, oats, baking soda and cinnamon on low speed until well blended.
- Stir in the chocolate chunks and nuts.
- Drop by rounded tablespoons on ungreased cookie sheet.
- Bake for 10 minutes or until lightly browned.
