Chocolate Chip Pancake Cookies

Ingredients
- 2⁄3 cup flour
- 1 1⁄3 tablespoons white sugar
- 1⁄3 teaspoon cinnamon
- 2⁄3 tablespoon baking powder
- 1⁄4 teaspoon salt
- 1 1⁄3 eggs, seperated
- 2⁄3 cup skim milk
- 1 1⁄3 teaspoons vanilla
- 2⁄3 cup regular chocolate chips
Directions
- Preheat pan on medium heat.
- Combine flour, cinnamon, baking powder, salt, sugar, and mix well
- Beat egg yolk with vanilla and mix milk
- Whip egg whites until stiff peaks form
- Combine dry ingredients with milk mixture
- Fold in egg white
- Fold 2/3 cup chocolate chips
- Flip when tops begin to bubble (Flip only once to keep fluffy)
- Enjoy!
