Chocolate Chip Flax Oatmeal Cookies

Ingredients
- 1 1⁄2 cups all-purpose flour
- 1 cup quick-cooking oatmeal
- 1⁄4 cup ground flax seeds
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3⁄4 cup butter, softened
- 1 cup granulated sugar
- 3⁄4 cup packed dark brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Directions
- Preheat oven to 350F and line 4 baking sheets with parchment paper.
- In a medium sized bowl, combine the first 5 ingredients, and whisk to blend.
- in a large bowl, beat together the butter, granulated sugar and the brown sugar on medium speed until fluffy about 4 minutes. Beat in the eggs one at a time beating until incorporated. Beat in the vanilla.
- Reduce the speed to low then blend in the flour mixture and beat just until combined. Stir in the chocolate chips.
- Using a small scoop or a spoon, drop a heaping teaspoon of dough onto the prepared baking sheets about 2 inches apart. Bake until golden brown, approximately 9 - 11 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to baking racks to cool.
