Chocolate Cheesecake

  1. Crush crackers in a food processor. Add sugar. Slowly add butter until well mixed. Press into 9" springform pan and bake at 350 degrees for 10 minutes. Cool.
  2. Increase oven to 450 degrees. Melt chocolates in double boiler; set aside.
  3. Combine cream cheese, sugar and vanilla with an electric mixer. Add eggs, one at a time, mixing after each addition. Blend in the melted chocolate.
  4. Pour into cooled crust and return to oven for 10 minutes. Reduce temperature to 250 degrees and bake an additional 45 minutes or until set.
  5. Chill well before serving. If desired, melt some more chocolate and drizzle on cheesecake in a decorative pattern.
  6. TIP: You may use a prepared chocolate graham crust, if desired. You would have to use two prepared crusts.
