Chocolate Carrot Cookies

Adapted from a traditional recipe to be healthier and added chocolate to hide the carrots. (The green drink by the cookies is sweet yogurt blended with some spinach and apple.) Show more

Ingredients

  • WET INGREDIENTS

  • 4  ounces  semisweet chocolate (112g or 8tbsp)
  • 34 cup butter (160g, or vegetable oil)
  • 23 cup sugar (140g)
  • 1  egg
  • 1  cup carrot, finely shredded (200g)
  • DRY INGREDIENTS

  • 2 23 cups flour (300g)
  • 2  teaspoons baking powder
  • 14 teaspoon baking soda
  • 1  teaspoon cinnamon
  • 12 teaspoon nutmeg
  • 18 teaspoon clove
  • 1  dash salt
  • 1  dash vanilla
  • 2  tablespoons orange zest (or marmalade)
  • OPTIONAL

  • 12 cup raisins (70g)
  • 12 cup  chopped  nuts (60g)
  • 32  whole almonds, for decoration

Directions

  1. Preheat oven to 350°F.
  2. Melt Chocolate and butter.
  3. Next, add sugar to cool down the chocolate and butter mixture, then mix in the egg.
  4. Combine the dry ingredients and add to the egg mixture.
  5. Stir in the carrots, nuts and raisins.
  6. Drop on cookie sheets apply decoration and bake for 12 minutes or until a little bit browned.
