Chocolate Caramel Pecan Bars

Ingredients
Crust
- 1 cup butter
- 1⁄2 cup granulated sugar
- 1 egg
- 2 3⁄4 cups flour
Caramel
- 2⁄3 cup brown sugar
- 1 cup butter
- 1⁄4 cup light corn syrup
Add later
- 2 1⁄2 cups pecans, chopped
- 1 1⁄2 cups chocolate chips
Directions
- Beat 1 cup of the butter and granulated sugar until creamy.
- Add egg until blended.
- Add in flour on low speed. I usually finish mixing with spatula.
- Spread dough into a well greased jelly roll pan (15x10) I use a larger pan (12x18) with success. *** You can do 1 1/2 times the carmel and nuts if you want to for a larger pan but I like the crust thinner so I keep the crust the same ***.
- Pat dough evenly across pan.
- Bake in a 350 degree oven for 15 to 20 minutes until light golden color.
- While crust is cooking make Carmel topping.
- Combine Caramel ingredients (brown sugar, butter, corn syrup) in saucepan over medium heat.
- Bring to a full boil, stirring frequently.
- Boil 2 minutes or until golden brown.
- Add pecans > take off burner.
- Pour Caramel over crust.
- Bake in 350 degree oven for 15 minutes.
- Sprinkle chips over Caramel.
- Bake in 350 degree oven for another 5-10 minutes.
- Remove from oven.
- Loosen edges and cool.
- Cut into bars.
