  1. Position rack in center of oven and preheat to 325 degrees. Brush the inside of an 8-inch square cake pan with oil and sprinkle flour over the pan. Tap out excess.
  2. Sift together flour, sugar, cocoa, baking soda and salt in a large mixing bowl.
  3. In a small bowl, whisk together egg, oil and vanilla. Stir lemon juice into milk. Add to the egg mixture. Stir in 1/2 cup hot water. Pour into the cocoa mixture and stir until smooth. Turn batter into pan.
  4. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. YIELD 12 servings.
