Chocolate Almond Brittle

Ingredients

  • 1  cup sugar
  • 12 cup light corn syrup
  • 18 teaspoon salt
  • 1  cup  coarsely chopped  almonds
  • 1  teaspoon butter
  • 1  teaspoon vanilla extract
  • 1 12 teaspoons baking soda
  • 34 lb  dark chocolate confectionary coating or 34 lb  milk chocolate confectionary coating

Directions

  1. In a 1 1/2 quart microwavable bowl,combine sugar,corn syrup and salt.
  2. Mix well.
  3. Microwave on high for 4 minutes.
  4. Stir in almonds,microwave on high for 4 minutes.
  5. Add the butter and vanilla,microwave on high for 1 and 1/2 minutes.
  6. Stir in baking soda.
  7. AS sson as mixture foams,quickly pour onto a greased metal baking sheet.
  8. Cool completely.
  9. Break into 2 inch pieces.
  10. Melt chocolate in a double boiler or microwave.
  11. Dip one side of brittle in chocolate and place on waxed paper to harden.
