Choc Raisin and Popcorn Bars

Yields: 12 bars
Ingredients
- 1⁄2 cup brown sugar
- 1⁄3 cup light corn syrup
- 1 teaspoon cinnamon
- 125 g butter
- 8 cups popcorn, fresh popped
- 1⁄2 cup salted peanuts
- 3⁄4 cup chocolate-covered raisins
Directions
- Combine sugar,syrup, cinnamon and butter in large pot.
- Stir over medium heat till butter melts.
- Simmer w/out boiling for 5 minutes till slightly thickened.
- Cool slightly.
- In a large bowl combine cooled popcorn, peanuts and choc covered raisins.
- Pour over syrup and mix well.
- Press into a greased lined 18 x 28 cm lamington tin.
- Allow to set then cut into bars.
- Drizzle with melted chocolate if so desired.
