Chips Ahoy! Cheesecake Sandwiches

I believe that this came from a Kraft magazine. Very good. Cooking time is freezing time.

Serves: 10

Yields: 10 sandwiches

Ingredients

  • 4  ounces cream cheese
  • 2  tablespoons sugar
  • 1  cup  thawed  whipped topping
  • 20  chocolate chip cookies (chips ahoy)
  • 4  squares  semisweet baking chocolate, melted
  • optional

  •  colored sprinkles
  •  mini chocolate chip
  •  chopped  nuts

Directions

  1. Beat cream cheese and sugar in a large bowl.
  2. Stir in whipped topping.
  3. Scoop 2 Tb. of the mixture onto the bottom of each of the 10 cookies.
  4. Top with the second cookie.
  5. Dip 1/2 of each sandwich in the melted chocolate.
  6. If desired roll or lightly press edges in sprinkles, nuts or chocolate chips.
  7. Place in a single layer in a airtight container.
  8. Freeze 3 hours.
